Colcannon: Irish Potato Goodness

Colcannon was something I’ve always wanted to make. So this St. Patricks’s Day, I buckled down and tried it. What’s “colcannon”? Irish potato goodness, my friends.

Colcannon: Irish Potato Goodness
I had no idea, until recently, that I’m part Irish. Yes, it’s true, in 1839, my ancestor immigrated to the USA. Then about 130 years later, here I am. Who knew? Perhaps this is why I have been fascinated with colcannon, Click to read on…

Super Simple Smoothie Recipe

Super simple smoothie recipe? Um, yes please. Only it’s not like a bitter green sea monster. But it’s a tasty treat you won’t even know is totally good for you. And you can even make it in those hours before morning coffee…

Easy Homemade Vanilla Extract

Easy homemade vanilla extract. Oh yes, it sure is. You’d be surprised that it’s easier than you think. You may never buy it again.

A while back, my family and I went to Mexico, the Yucatan to be exact. I was giddy in the store buying drinking chocolate and vanilla extract. That bottle of deep noted (stop, I’m not sommelier or anything) vanilla extract lasted me a little less than a year. It made me weak in the knees. But to go back and purchase it was, well, a little out of a yearly price range.

Then I found a recipe to make it myself. It goes beautifully in hot chocolate.

It’s super easy, promise. I even hesitate to call this a “recipe”, as it’s more of a method. But hey, roll with me here.
