What I’m Reading: Einkorn Wheat Flour
Just received my order of Einkorn flour. I’m curious about it, since it’s supposed to be easier to digest than other wheat flours.
Have you heard of Einkorn? I got my flour from this supplier (they even have recipes for the flour – win!) Einkorn is an ancient grain (maybe the first wheat that we know of?), and has some distinct differences from modern wheat. I’ve have some awesome success with eliminating gluten from my diet, and when I heard this flour has less (and maybe missing the troublesome bits for those of us who are gluten-intolerant), I was intrigued! Of course, I’m doing this with a bit of caution, experimenting slowly.
I can’t wait to start playing with it.
